Chocolate Peanut Butter Oat Balls

These chocolate peanut butter OAT BALLS are a tasty and easy snack to make. If you are trying to cut down on added sugar, these are a great homemade substitute for granola bars! They can satisfy your sweet tooth while keeping you full in between meals.

Chocolate Peanut Butter Oat Balls

Recipe

Ingredients

  • 1 cup pitted dates

  • 3 tbsp natural peanut butter

  • 1 cup oats

  • 1 tbsp flaxmeal

  • 1 tsp cinnamon

  • pinch of salt

  • 1 tbsp cocoa powder

  • 1/4 cup shredded coconut

Steps

  1. If using dried, soak the dates in hot water for 10 minutes.

  2. Blend the dates in a food processor until it reaches a paste like consistency.

  3. Add the oats, peanut butter, salt and cocoa powder to the food processor. Pulse until combined (still leaving some bigger pieces of oats). You may need to scrape the sides with a spatula a couple times. If the mixture is too thick, add 1 tbsp of water at a time to help it blend.

  4. Scoop out a heaping tablespoon of the mixture and roll into a ball. Roll the ball into the coconut to coat all sides.

  5. Store in the refrigerator.
